How to Get Mom to Go Green For Earth Day, Mothers’ Day and Every Day

All Moms needs to eat a more plant-based diet. More and more studies show that leaving meat and dairy out of your diet may be the best thing you can do toward reversing disease and creating true health. Plus, animal agriculture is hard on the planet as “growing cattle for beef” uses up thousands more gallons of water and creates climate-changing methane gas.

But how to get Mom to ditch the meat? Consider making her a meal using jackfruit.

What is it? Jackfruit is a spiky green fruit indigenous to southern India. It is a staple for Indians, who eat a lot of vegetarian dishes, because it is the largest tree-borne fruit in the world and can easily be cooked up as a main dish. The meaty texture of jackfruit is what makes it a perfect meat alternative.

JackfruitGroup 2The Jackfruit Company recently introduced four easy-to-use frozen meals for a crowd, including barbecue, Tex-Mex, sesame-ginger and curry.  Here’s a recipe for creating Mom’s first jackfruit meal:

Sesame Ginger Jackfruit Stir-Fry With Rice

Ingredients:
White or brown medium or long grain rice, such as sushi rice or jasmine rice

Vegetable oil

Broccoli florets

Carrots (cut into batons or strips)

Red bell pepper, sliced

1 package Jackfruit Company Sesame-Ginger Jackfruit

Sesame seeds (optional)

Directions:
Prepare the desired amount of rice according to package instructions. Heat a wok or skillet to medium-high heat, and add enough oil to lightly coat the bottom. Add the broccoli and carrots and cook for about two minutes, stirring often. Add the red bell pepper and cook for one minute, stirring often.

Add the Sesame-Ginger Jackfruit and mix all of the contents of the wok or skillet until everything is coated in sauce. Continue to cook, stirring often, until vegetables achieve desired texture and the jackfruit reaches the desired temperature, around three to five minutes. Place some rice into bowls and top with Sesame-Ginger Jackfruit stir-fry. Feel free to garnish with a sprinkle of sesame seeds.
